A proprietary blend of citric, malic and tartaric acids used to increase the acidity in low-acid fruit wines. This is a mixture of tartaric, malic and citric acids in a 40-40-20 ratio. It is often called for in recipes, but substitution of equal weights of tartaric or citric will give you the same result. 5 ml (one teaspoon) = approximately 4 grams
