Simple extract recipe with good instructions. The muslin bag that came in the box was too small to fit all the specialty grains so I missed a couple ounces. I used Wyeast 1084 for this.
Just tried a test bottle. 8 days in primary, 8 in secondary. 10 in the bottle.
My notes at this point:
Appearance: Very dark - much darker than I expected. Some chill hazy due to my lack of cold crash. Thin, light brown head with decent retention. Little to no lacing but some CO2 in suspension. Another week to condition and carb will be perfect.
Aroma: Strong chocolate, some roasted character. Little to no hops to the nose.
Flavor: Like aroma, strong chocolate character. Sweet in front, but not cloyingly so. Roasty. Finishes a little bit metallic/green (I expect this to improve as it continues to condition). Somewhat unbalanced. I will probably change the hop profile slightly if I make this again.
Mouthfeel: Medium body. Carbonation is already quite good.
Overall: This beer is still a little young, but I am very excited about this brew. This is a great recipe and I expect one more week to blend, condition and mellow will make it even better.
